Ingredients
  1. 1 tbsp chia seeds
  2. 1 cup whole-wheat or whole-grain flour
  3. 1/2 cup white flour
  4. 2 tsp cinnamon
  5. 1/2 tsp nutmeg
  6. 2 tsp baking soda
  7. 1/2 tsp salt
  8. 1 can (16 oz) organic pumpkin
  9. 2 eggs
  10. 1/4 cup extra-virgin olive oil
  11. 1/2 cup agave necter
  12. 1 tbsp vanilla
  13. 1/2 cup walnuts or pecans
Instructions
  1. Preheat oven to 350°F.
  2. Mix dry ingredients together in a bowl. In a separate bowl, mix all wet ingredients. Fold the wet ingredients (fold in nuts if you are using them) into the dry ingredients and spoon into paper-lined muffin or greased muffin tins.
  3. Bake for 25 to 30 minutes or until a toothpick inserted into the middle of a muffin comes out clean.
